chicken adobo
The only meat dish I ever cook! A childhood favorite & a super easy comfort dish for when I'm missing home :) Makes about 4 servings.
✶ ingredients
- 1 pack boneless chicken thighs, 4-6 pieces
- 3/4 cup toyomansi soy sauce with calamansi
- 3/4 cup cane vinegar
- 1 tsp black peppercorns
- 2 whole star anise
- 2 bay leaves
- 1 whole head of garlic
- olive oil
- white rice
✶ instructions
Prepare rice. I just put it on a rice cooker :D
Pour a little olive oil into a medium pot, set the heat to medium, add chicken, and stir a bit until the chicken is lightly coated in the olive oil. Allow the chicken to cook until it begins to brown a bit at the edges.
Add the rest of the ingredients and cook for an hour or longer at a low boil.
Serve over rice and enjoy! :)

I use Datu Puti for both the cane vinegar and the toyomansi sauce; I've never used any other brand. If you can't find toyomansi, regular soy sauce is also good!
Calrose rice is my favorite for this dish.
