spicy giardiniera tuna melt

A recent favorite from my dad! Makes about 3 sandwiches, but you can also eat any leftover tuna salad on crackers.

Heat up a bit of butter and olive oil in a pan on medium. Toast both sides of the bread slices.

Drain water from canned tuna and feed it to a cat (Make sure it doesn't have additives or salt!) then transfer tuna to a bowl and break it apart with a fork.

Finely mince giardiniera.

Mix tuna, mayo, giardiniera, and panko crumbs.

Spread on one piece of toasted bread (per sandwich) and broil until surface begins to sizzle. Place a slice of pepperjack on top and broil until melted.

Place second piece of toasted bread on top, slice in half diagonally, and serve! :)

Chicago-style giardiniera is packaged in a light oil, while Italian-style is packaged in vinegar. I like Marconi's Chicago-style hot giardiniera best :)

My family prefers making these with brioche buns, if that's more your style!
